How to cook with Stainless Steel

TIPS FOR LEARNING TO CARE FOR AND COOK WITH STAINLESS STEEL.

Stainless Steel is one of the most widely used materials in professional kitchen due to its durability, strength and safety. If you want to make the most of it, here are some key tips.

Advantages of Stainless Steel

  • High Resistance:
It does not deform easily and withstands high temperatures.

  • Does not alter flavors:
It is an inert material that does not react with food.

  • Easy to clean:
It can be washed with water and soap without the risk of damage.

  • Safe and free of coatings:
It does not contain chemical coatings that could peel off over time.

Cooking tips

  1. Preheat the pan:
Before adding food, heat it over medium-high heat and then reduce the heat.
  1. How to know if the pan is ready?:
Try wetting your fingers and dropping a few drops of water onto the pan. If the drops evaporate, it means your pan is not ready yet.

When these water droplets slide as if floating on the surface, the pan will be ready for cooking.

  1. Oil at the right temperature:
Add oil, you will need to use more than when cooking with non-stick cookware, and spread it across the surface. If the pan starts to smoke, wait for the temperature to drop, as it means it's too hot. Wait a few seconds before adding the ingredients. It's always better if they have been at room temperature for a while beforehand, as this will prevent a temperature contrast and help avoid food sticking.
  1. Don't move the food too soon:
Allow it to brown before attempting to flip it.

By allowing the food to brown, it will be much easier to flip and perform the same process on the other side. This will prevent it from sticking and result in a perfectly browned and seared dish.

Proper cleaning

  1. Let the pan cool down:
Once the pan is no longer hot and you can touch it, use hot water, a soft sponge and mild soap to clean it.

For stubborn stains, a paste of baking soda and water is ideal.

  1. Don't let the pan air dry:
It's better to dry the pan immediately with a dry cloth to prevent it from rusting and to extend its lifespan.
